TWICE BAKED POTATOES 2 Tbsp. butter 2 Tbsp. sour cream 1/4 tsp. salt dash of pepper Microwave desired number of potatoes, according to chart in your cookbook. Slice the top from each potato. With teaspoon, remove center of potatoes to mixing bowl, leaving shells intact. Add to mixing bowl butter, sour cream, salt and pepper. Mix with electric mixer until smooth. Divide potato mixture evenly among shells, mounding if necessary. Sprinkle with chives, if desired. Place potatoes on plate suitable for microwave oven. Potatoes may be refrigerated at this point, if desired. If potatoes are microwaved immediately, microwave on High for 1 minute per potato. If more than 2 potatoes are microwaved at one time, arrange in a circle. If potatoes are microwaved from refrigerator temperature, increase time for each potato by 1/2 minute.
