CREAMED CAULIFLOWER 1 1/2 lb. fresh cauliflower 1 stick oleo 1/2 c. flour 1 3/4 c. milk dash of paprika Clean cauliflower and cut into flowerets. Place in 2-quart glass casserole with 1/4 cup water and salt. Put in microwave, cover and cook 7 to 9 minutes on High. Let stand while you prepare sauce. Melt oleo in 1-quart glass casserole. Cook 1 minute on High. Add flour and blend well. Gradually add milk, stirring constantly. Cook, uncovered, 4 minutes on High or until sauce thickens and bubbles. Stir after first 2 minutes; then at end of each 30 seconds. Add sauce to cauli- flower; sprinkle with paprika. Serves 6.
