BUTTERMILK PANCAKES 1 egg, beaten 1 c. buttermilk 2 Tbsp. salad oil 1 c. flour 1 Tbsp. sugar 1 tsp. baking powder 1/2 tsp. soda 1/2 tsp. salt Beat ingredients in order listed with rotary beater until smooth. Heat greased griddle until a few drops of water skitter around. Pour batter (about 1/4 cup) onto hot griddle. Turn pancakes when they are puffed and full of bubbles but before bubbles break. Bake other side until golden brown. Makes 10 (4-inch) pancakes.
