PINEAPPLE CASSEROLE 1 large can chunk pineapple, drained 3/4 c. brown sugar 3 Tbsp. flour 1 c. Cheddar cheese, grated 1 1/2 c. Ritz crackers (1 tube equals 1 1/2 c.) 1 stick butter or margarine Drain pineapple. Spread pineapple in bottom of small casserole, rectangular or square. Use a 9 x 13-inch casserole dish if you double the recipe. Mix flour and sugar together, then add the pineapple juice to make a paste. Pour mixture over pineapple and mix well. Top with the cheese and mix again. In separate bowl mix cracker crumbs with melted butter or margarine, sprinkle on top of pineapple mixture. Bake 15 to 20 minutes in 350 degrees oven.
