CRABMEAT STUFFING

1 c. fresh mushrooms, sliced
1/4 c. chopped onion
2 Tbsp. butter
1 Tbsp. all-purpose flour
1/4 tsp. salt
dash of pepper
1/3 c. milk
1 slightly beaten egg yolk
1/4 c. fine dry bread crumbs
6 oz. frozen crabmeat or 1 (7
oz.) can crabmeat, drained,
flaked and cartilage
removed

In saucepan cook mushrooms and onion in butter, stir in
flour salt and pepper. Add milk all at once and cook and stir
until thickened and bubbly. Stir about 1/2 hot mixture into
beaten egg yolk then return all the mixture to saucepan. Cook
and stir one more minute. Add bread crumbs then fold in
crabmeat. Use to stuff shrimp, lobster, etc.
