GRATED POTATO DUMPLINGS (Krumpli Galuska) 3 medium potatoes 1 Tbsp. salt 1 egg 1 c. flour or more 4 Tbsp. butter Peel potatoes and grate into a large bowl. Add salt, egg and flour to make a stiff dough. Have ready a large pot of boiling salted water. Drop potato batter into boiling water from the tip of a spoon or tip of a knife to form dumplings. Boil until dumplings rise to the top (cook at least 5 to 8 minutes). Drain in colander and rinse with cold water. In a large pot, melt butter, add dumplings and serve hot. (Suit to taste.) May be served with sour cream, cottage cheese, cream cheese, sauteed sweet cabbage or sauteed sauerkraut.
