FRESH MANGO CAKE 2 1/2 c. mashed mango 2 c. sugar 2 eggs 2 c. flour 2 tsp. baking soda 1 c. chopped walnuts 1 tsp. vanilla Icing: 4 oz. cream cheese 1/4 c. butter 2 1/4 c. confectioners sugar 1 tsp. vanilla This cake is very moist and delicious! Combine mashed mango, sugar and eggs in medium bowl. Stir in flour, soda, nuts and vanilla. Pour into greased and floured 13 x 9 x 2-inch pan. Bake at 350 degrees for 35 to 40 minutes. Combine icing ingre- dients and mix well. Frost cooled cake with icing.
