PERFECT PEANUT BUTTER COOKIES 1/2 c. butter or margarine 1/2 c. creamy or chunky peanut butter 1/2 c. granulated sugar 1/2 c. light brown sugar, firmly packed 1 large egg 3/4 tsp. vanilla 1 1/4 c. all-purpose flour 3/4 tsp. baking soda 1/4 tsp. salt Heat oven to 375 degrees. In large bowl with electric mixer at medium speed, beat butter, peanut butter, granulated sugar and 1/4 cup brown sugar until light and fluffy. Beat in egg and vanilla until thoroughly blended. In small bowl combine flour, baking soda and salt. With mixer at low speed, beat into butter mixture until blended. Sprinkle remaining 1/4 cup brown sugar on top of dough. Using rubber spatula, lightly fold in, some sugar granules are still visible. Roll heaping teaspoon of dough into balls. Place 2-inches apart on ungreased cookie sheets. Using bottom of glass, press each ball into 1/4-inch thick circle. Bake 5 to 8 minutes until browned. Remove cookies to wire rack and cool. Makes about 3 1/2 dozen cookies with 73 calories per cookie.
