COCONUT BLACK WALNUT CAKE 2 c. sugar 1 c. cooking oil 4 eggs, beaten 3 c. flour 1/2 tsp. salt 1/2 tsp. soda 1/2 tsp. baking powder 1 c. buttermilk 1 c. walnuts 1 c. flaked coconut 2 tsp. coconut extract Coconut Syrup: 1 c. sugar 1/2 c. water 2 Tbsp. butter 1 tsp. coconut flavoring Combine sugar, oil and eggs; beat well. Combine dry ingredients; add to sugar mixture alternately with buttermilk. Stir in nuts and coconut flavoring. Bake at 325 degrees for 1 hour and 5 minutes in a greased and floured tube pan. Pour hot coconut syrup over hot cake. Allow cake to remain in pan 4 hours. Coconut Syrup: Mix and boil for 5 minutes.
