GRANDMA'S APPLE SQUARES 3 eggs 1 3/4 c. sugar 2 c. sifted flour 1 tsp. cinnamon 1 tsp. baking powder 1/2 tsp. salt 3/4 c. oil 1 tsp. vanilla 2 c. thinly sliced apples 3/4 c. chopped walnuts (optional) Beat eggs and add sugar gradually. Beat until mixture is light and fluffy. Add sifted dry ingredients. Stir in oil and vanilla; blend well. Fold in apple slices and nuts, if desired. Turn into greased 9 x 13-inch baking pan. Bake at 350 degrees for 40 to 45 minutes. Cut into squares to serve. Top with old-fashioned sauce. Old-Fashioned Sauce: 1 c. sugar 2 Tbsp. cornstarch 1/2 tsp. salt 2 c. cold water 1/4 tsp. nutmeg 2 Tbsp. butter or margarine 1 tsp. lemon or vanilla extract Mix sugar and cornstarch with salt in a saucepan. Stir until cornstarch is blended. Add cold water gradually; stir well. Place on stove and bring to boil, stirring constantly until thickened. Add nutmeg, butter and flavoring. Serve warm.
