MARSHMALLOW FROSTING 2 egg whites 1 Tbsp. light corn syrup 1/3 c. water 1 1/2 c. sugar 1/4 tsp. cream of tartar 1 1/2 c. mini marshmallows In a double boiler combine egg whites, sugar, cream of tartar, corn syrup and water. Beat on low speed for 1 minute. Place over boiling water and beat on high speed until stiff peaks form (about 7 minutes). Remove from heat, add marshmal- lows, continue beating until spreading consistency.
