FRESH APPLE CAKE 5 c. apples, grated or chopped 2 c. sugar 1/2 c. oil 1 tsp. vanilla 2 eggs, beaten until light 2 c. flour 2 tsp. soda 2 tsp. cinnamon 1 tsp. salt 1/2 c. walnuts Mix apples and sugar together. Add oil, vanilla and eggs; mix well. Add remaining ingredients; when mixed well, bake in well greased 13 x 9 x 2-inch pan at 350 degrees for 1 hour. Fresh Apple Cake Frosting: 1/2 c. margarine 1 (8 oz.) pkg. cream cheese 1 tsp. vanilla 2 Tbsp. fruit juice (orange, pineapple, pear, etc.) 1 box powdered sugar Mix with mixer at medium speed; spread on cooled Fresh Apple Cake.
