ENGLISH TOFFEE 1/2 lb. margarine 1 c. sugar 2 Tbsp. water 8 oz. chocolate 1/2 c. finely chopped nuts Makes excellent Christmas gifts. Melt butter and bring to boil. Add sugar, stirring slowly in center. (Never stir sides.) Add water and continue to boil over low heat to 290 degrees (about 30 minutes). While toffee is cooking, melt chocolate in double boiler. Pour half of chocolate in a buttered 8-inch square pan, spreading over bottom of pan. Let firm up in refrigerator until toffee is ready. Pour toffee over chocolate in pan. Return to refriger- ator until firm. Pour remaining chocolate over firm toffee and sprinkle with nuts. Return to refrigerator for about 1 or 2 hours. Place upside down on work area and chop into pieces.
