MUFFIN CHEESECAKES 2 (8 oz.) pkg. cream cheese 3/4 c. sugar 2 eggs 1 Tbsp. lemon juice Blend all ingredients. Use muffin papers to line muffin cups. Place vanilla wafer in bottom of each cup. Divide mixture to make 24 cheesecakes. Bake at 375 degrees for 15 minutes. When cool, top with choice of pie filling. (One can will do 24 cakes.)
