PUMPKIN CHEESE CAKE Crust: (Makes 2) 2 c. flour 2 tsp. baking powder 2 eggs, beaten 2 1/2 c. vegetable oil 1 c. sugar 2 tsp. pumpkin spice Filling: (one cake) 8 oz. cream cheese plus 2 c. pumpkin 3/4 c. sugar 1 1/2 tsp. flour 3 eggs, beaten 1 1/2 tsp. vanilla 1 (13 oz.) can milk 1 1/2 c. milk 2 tsp. pumpkin spice cinnamon, on top Crust: Mix in order given: flour, baking powder, eggs, oil, sugar and pumpkin spice. Press into oblong pan and up sides. Filling: Mix in order given: Cream cheese, pumpkin, sugar, flour, eggs, vanilla, milk, pumpkin spice and cinnamon. Beat well. Pour into crust. Bake. When testing for doneness, stick with pick. It should be clean. Open oven door and leave cake set in oven until cool.
