PHILLY CHEESECAKE 1 c. graham cracker crumbs 3 Tbsp. sugar 3 Tbsp. margarine, melted 3 (8 oz.) Philadelphia cream cheese, softened 3/4 c. sugar 3 eggs 1 tsp. vanilla cherries or blueberries for topping Combine crumbs, sugar and margarine; press onto bottom of 9-inch spring-form pan. Combine cheese and sugar; mix at medium speed until well blended. Add eggs one at a time, mixing well after each one. Blend in vanilla. Pour over crust. Bake at 450 degrees for 10 minutes. Reduce oven to 250 degrees; continue baking for 35 minutes. Loosen cake from rim of pan with knife. Cool before removing rim of pan. Chill and add topping of choice. Serves 10 to 12.
