CHOCOLATE CHIP CHEESE CUPCAKES Topping: 8 oz. cream cheese 1 egg 1/3 c. sugar 1/4 tsp. salt 1 c. chocolate chips Cake: 1 1/2 c. flour 1 c. sugar 1/4 c. cocoa 1/2 tsp. salt 1 tsp. baking soda 1 c. hot coffee 1/2 c. oil 1 Tbsp. vinegar 1/2 tsp. vanilla Cake: Mix ingredients together, dry ingredients first, then add liquids. Topping: Mix together cream cheese, egg, sugar and salt and then fold in chocolate chips. If making big cupcakes, fill 1/2 to 1/3 full, topping with 1 heaping tablespoon of cheese mixture. If making little cupcakes, fill only 1/2 full with 1 teaspoon of cheese mixture. Cupcakes do rise. Use liners. Bake big cupcakes 30 minutes and little cupcakes 20 minutes in 350 degrees oven. Sprinkle with powdered sugar. Makes about 20 big cupcakes or 40 little cupcakes.
