CARROT CAKE 1 1/4 c. oil 2 c. sugar 2 c. sifted flour 4 eggs 3 c. grated carrots 2 tsp. baking powder 1 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 1 c. chopped nuts (optional) Combine oil and sugar. Mix well. Sift together remain- ing dry ingredients. Sift half of the dry ingredients into sugar mixture; blend. Sift in remaining dry ingredients alternately with eggs, one at a time, mixing well after each addition. Add carrots and mix well. Mix in pecans and bake at 325 degrees approximately 1 hour. Icing For Carrot Cake: 1 stick margarine 1 (8 oz.) pkg. cream cheese 1 box confectioners sugar Mix all ingredients together until creamy and spread over cake.
