PUMPKIN CAKE 4 eggs 2 c. sugar 1 c. vegetable oil 2 c. flour 2 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon 1 tsp. baking powder 2 c. cooked pumpkin Heat oven to 350 degrees. Mix together the eggs, sugar and vegetable oil in a bowl at medium speed until well blended. Add all the other ingredients and mix well. Grease 2 (9 x 1 1/2-inch) round layer pans or 1 (13 x 9 x 2-inch) cake pan. Dust lightly with flour. Pour batter in pan and bake for 30 minutes. (Test with toothpick to see if done.) Let cool and add icing. Refrigerate. Icing for Pumpkin Cake: 1 stick butter or margarine 1 box (16 oz.) confectioners 10x sugar 1 tsp. vanilla 1/2 c. chopped nuts 8 oz. cream cheese Let butter and cream cheese soften in bowl first before mixing all the ingredients together, until creamy. Spread over top of cake. Use half of the recipe for a sheet cake.
