PERSIMMON COOKIES 1 c. persimmon pulp 1 tsp. soda 1 c. sugar 1/2 c. shortening 1 egg, beaten 2 c. flour 1 tsp. cinnamon 1/2 tsp. ground cloves 1/2 tsp. nutmeg 1/2 tsp. salt 1 c. chopped nuts 1 c. chopped dates (raisins may be substituted) Beat persimmon pulp, soda, sugar and shortening until creamy. Add the egg, flour, sifted spices, nuts and dates. Drop by teaspoons on greased baking sheet. Bake at 375 degrees for 12 to 15 minutes. Makes about 3 dozen cookies.
