CANDY CANE COOKIES 3/4 c. butter or margarine 3/4 c. sugar 1 egg 1/2 tsp. vanilla 1/2 tsp. peppermint extract 2 c. flour 1/2 tsp. salt 1/4 tsp. baking powder 1/3 c. flaked coconut (optional) 1 tsp. red food coloring Cream butter and sugar. Beat in egg, vanilla and peppermint extract. Stir flour with salt and baking powder. Put into creamed mixture and divide dough into halves. Stir coconut into one portion of dough. Into other half, stir in red food coloring. Chill both halves of dough, for thirty minutes. Divide white dough into thirty balls and do the same with red dough. With hands, roll each ball into lengths. Twist a red length and a white length together to form a candy cane and pinch at ends, placing on ungreased cookie sheet. Repeat with all. Bake at 375 degrees for 10 minutes. Makes 30 cookies.
