ROXY'S RUM CAKE 1 box Duncan Hines yellow cake mix 1 (3 3/4 oz.) box instant vanilla pudding 1/2 c. dark rum 1/2 c. oil 4 eggs 1 stick butter 1 c. sugar 1/4 c. water 1/4 c. dark rum Mix cake mix, pudding mix, dark rum, oil and eggs for 10 minutes on high speed of mixer. Pour into well greased and floured Bundt pan. Bake at 325 degrees for 50 minutes. When cake is about 5 minutes from being baked through, melt 1 stick of butter and add 1 cup sugar and 1/4 cup water in small saucepan. Boil for one minute. Remove from heat and stir in 1/4 cup dark rum. Remove cake from oven and pierce the cake numerous times with a large knife. Spoon butter/rum mixture evenly over cake. Let cake cool one hour and promptly remove from Bundt pan. Note: Chopped pecans may be spread in Bundt pan prior to pouring in cake batter if decorative topping is desired.
