PINEAPPLE UPSIDE-DOWN CAKE 1/2 c. shortening 1 c. sugar 2 eggs, well beaten 2 c. flour 2 tsp. baking powder 1/4 tsp. salt 3/4 c. syrup from pineapple Topping: 4 Tbsp. butter 1 c. brown sugar Cream shortening and sugar; add eggs. Add dry ingredi- ents alternately with syrup. Simmer in a 9 inch skillet 4 tablespoons butter and 1 cup brown sugar. Arrange pineapple slices on top of butter and sugar, maraschino cherries in center of each slice. Pour batter over all. Bake at 350 degrees about 50 minutes.
