CHOCOLATE CHIP MERINGUE COOKIES 4 egg whites 1 c. sugar 1 Tbsp. vanilla 1 to 2 c. chocolate chips Beat 4 egg whites until very stiff and dry. Add sugar very slowly, beating constantly. Add the vanilla slowly, beating constantly. Stir in the chocolate chips. Spoon by teaspoonfuls onto paper covered cookie sheet (I use grocery bags). Bake 1 hour at 250 degrees. Turn off oven and leave several hours or overnight. Cool, dry weather is best for making these cookies. Number of servings: 3 to 4 dozen. Preparation time: 20 minutes.
