CREAMY RICE PUDDING 1 c. long grain rice 2 qt. milk 1 pt. heavy cream 1/2 c. sugar pinch of salt 1 Tbsp. butter 2 eggs, beaten in 1 c. milk 2 tsp. vanilla Rinse rice well. In saucepan, mix rice, 1 1/2 quarts milk, salt and butter. Allow mixture to come to a boil. Simmer for 40 minutes, stirring frequently. Add sugar and simmer until mixture thickens. Beat eggs with 1 cup milk and vanilla. Pour slowly into rice mixture, letting it come to a boil. Add heavy cream and again bring to a boil. Stir fre- quently while cooling.
