LEMON TART Crust: 2 c. flour 2/3 c. sugar 1 stick butter 1 egg Filling: 1/2 stick butter 3/4 c. sugar 1 large lemon 1 egg Crust: Blend ingredients and spread in a pie dish. Filling: Melt butter and add sugar. Cut lemon, remove seeds and grind entire lemon (including rind). Add to butter- sugar mixture. Cook for about 5 minutes. Cool. Beat the egg and add to mixture; pour into pie shell. Bake in a 325 degrees oven about 25 minutes. Note: This will be very flat and thin; will not rise!
