BAKLAVA--1000 LAYER PASTRY (Middle East) 1 lb. filo 1 lb. finely chopped walnuts, pistachios or almonds 1 lb. butter (preferably unsalted) 1 c. sugar 1 c. water 2 Tbsp. honey juice of 1 lemon pomegranate syrup (few drops) or orange flower water Butter baking dish. Place 4 sheets filo in pan and brush with melted butter. Repeat 3 times. Sprinkle with chopped nuts. Add 4 sheets, butter, sprinkle again with nuts. Repeat this process until nuts are use up. Top with 4 sheets 3 times again. Butter. With sharp knife, score all the way down to pan in diamond shapes. Bake in slow oven (250 degrees) for 2 1/2 hours, until light golden brown. While still hot, pour on syrup. Cool and serve. Syrup: Boil sugar and water and cook until thick. Add honey, lemon and pomegranate or orange water.
