BLUEBERRY DUMPLINGS 2 c. blueberries 3 Tbsp. lemon juice grated rind of 1 lemon 1/4 tsp. cinnamon (optional) 1 c. sugar 2 c. water 1/4 tsp. salt Wash the blueberries and combine with lemon juice, rind, sugar, salt and cinnamon in a saucepan. Cook for 4 or 5 minutes. While the mixture cooks, prepare the dumplings. Dumplings: 1 c. sifted flour 2 tsp. baking powder 1/4 tsp. salt 1/2 c. sugar 2 Tbsp. butter 1/2 c. milk Cream the butter and sugar; add the milk. Then mix in the flour which has been sifted with the baking powder and salt. Drop this batter by spoonfuls into the boiling blueberry mixture. Cover and boil gently over low heat for 20 minutes without remaining cover. Blueberry dumplings are a real old-fashioned dessert with cream or ice cream.
