RHUBARB DELIGHT DESSERT Crust: 2 c. flour 2 Tbsp. sugar 1/2 c. butter 1/3 c. nuts Filling: 5 to 6 c. rhubarb 4 Tbsp. flour 2 1/2 c. sugar 4 beaten egg yolks 2/3 c. cream Topping: 4 egg whites 1/4 tsp. salt 1/2 tsp. cream of tartar 4 Tbsp. sugar Mix flour, sugar, butter and nuts like pie crust. Press into 9 x 13-inch pan. Bake at 350 degrees for 10 minutes. Mix rhubarb, flour, sugar, egg yolks and cream together; pour over baked crust. Bake 50 minutes or until thickened. Beat egg whites and salt until frothy. Add cream of tartar. Beat in 4 tablespoons sugar until dissolved. Spread over rhubarb mix and bake 12 to 15 minutes longer.
