BAKED APPLE DOUGHNUTS 1 1/2 c. sifted flour 1 3/4 tsp. baking powder 1/2 c. sugar 1/2 tsp. nutmeg 1/3 c. shortening 1 beaten egg 1/2 c. milk 1/2 c. finely diced apple 1/2 c. butter 1/2 c. sugar 1 tsp. cinnamon In large bowl, combine flour, baking powder, sugar and nutmeg. Add shortening and cut in with pastry blender or 2 knives until crumbly; set aside. Combine egg, milk and apple; mix well. Add to first mixture just until blended. Spoon into 12 greased muffin tins until they are 2/3 full. Bake at 350 degrees for 25 minutes, or until they test done. Meanwhile, melt butter; set aside. Combine sugar and cinnamon; mix well. Remove immediately from oven; roll each donut in melted butter, then in the sugar mixture, coating evenly. Let cool. Makes 12.
