AUTUMN APPLE CHEESECAKE Filling: 2 (8 oz.) pkg. softened cream cheese 1/2 c. sugar 2 eggs 1/2 tsp. vanilla Topping: 4 c. thinly peeled apple slices 1/3 c. sugar 1/2 tsp. cinnamon 1/2 c. chopped pecans Crust: 1 c. graham cracker crumbs 1/3 c. sugar 3 Tbsp. melted butter 1/2 tsp. cinnamon Combine all crust ingredients; press onto bottom of 9-inch spring-form pan. Bake at 350 degrees for 10 minutes. Set aside to cool. Combine cream cheese and 1/2 cup sugar. Beat at medium speed until well blended. Add eggs, one at a time, mixing well. Blend in 1/2 teaspoon vanilla. Pour into crust. Toss apples with 1/3 cup sugar and 1/2 teaspoon cinnamon. Spoon over filling. Sprinkle with nuts. Bake at 350 degrees for 45 minutes to 70 minutes.
