ZEPPOLES 2 c. flour 4 tsp. baking powder 1 (15 oz.) container of Ricotta cheese 1/4 c. sugar 1 Tbsp. brandy, rum or cream sherry 2 eggs, lightly beaten pinch of salt 1 1/2 c. oil for frying confectioners sugar for dusting Zeppoles Combine all ingredients, except oil and confectioners sugar. Let stand for half hour. Drop by teaspoons in hot oil and brown on all sides. Drain on paper towels. Serve dusted with confectioners sugar. Delicious!!
