APPLE PIE (9-Inch) 7 c. sliced apples 1 c. sugar 1 tsp. cinnamon or 1 tsp. nutmeg 2 Tbsp. butter or oleo 1 Tbsp. flour pastry for a 2-crust pie Jonathans, Golden or Red Delicious and Winesaps, singly or mixed, make a very good apple pie. Peel apples, quarter, take out cores and slice them thin. Mix the sugar, flour and cinnamon or nutmeg together, then stir it into the apples. Pour this mixture into a pastry-lined pan and spread evenly. Dot with the 2 tablespoons of butter. Put on top crust, seal and decorate. To make simple decoration for top crust, fold it in half and at fold make short cuts, then place on top. Prick with fork, seal and bake at 450 degrees for 10 minutes, then reduce to 350 degrees for 1 hour. Yields 8 servings. Serving Suggestion: Add grated sharp Cheddar cheese to crust and roll in or serve with slices of sharp Cheddar cheese.
