CHOCOLATE PUDDING 2 1/2 c. milk 3/4 tsp. stevia rebaudiana 1/8 tsp. salt 1 Tbsp. butter 2 1/2 Tbsp. cornstarch 1 sq. unsweetened chocolate 1 egg, slightly beaten 1 tsp. vanilla In a saucepan, combine milk, cornstarch, stevia, salt and unsweetened chocolate. Cook over medium heat until mixture comes to a boil. Stir constantly. Boil 1 minute. Blend small amount of hot mixture with egg; whip and add to remaining hot mixture. Cook until mixture bubbles. Stir constantly. Remove from heat and add butter and vanilla. Beat with rotary beater until smooth. Cool slightly and pour into serving dishes. Refrigerate. Makes 4 servings.
