HIGH AND MIGHTY CREAM PUFFS 1/2 c. butter or margarine 1 c. hot water 1 c. sifted all-purpose flour dash of salt 4 eggs Combine butter or margarine and hot water in a heavy saucepan and put on fire until butter has melted and mixture has started to boil. Then add flour and salt, beating con- stantly, and stir until mixture forms a ball. This takes only a minute or two. Remove from fire and cool to medium warm. Now add the eggs, one at a time, beating hard after each addition. Drop onto ungreased cookie sheet and make 8 uniform mounds of dough. Bake in a 400 degrees oven for 45 minutes. When beads of moisture have disappeared, puffs are done. These can be filled with an endless variety of custards or whipped cream. Dust tops with powdered sugar (sifted). Pointer: These can be made without an electric mixer, of course, but require hard beating. If a mixer is used, set it at the lowest speed to prevent dough from climbing beaters. It is impossible to overbeat cream puff dough. These cream puffs are huge and guaranteed not to fall if you bake them at 400 degrees until all moisture has disappeared. Slit them while hot. Rich Custard Filling For Cream Puffs: 1/2 c. sugar 1/2 tsp. salt 6 Tbsp. flour 2 c. rich milk or light cream 4 egg yolks 2 tsp. vanilla flavoring In a saucepan, put the sugar, salt and flour and mix together. Stir in the milk and cook over low heat, stirring constantly until it boils. Boil for 1 minute only, remove from heat. Stir a little into the beaten egg yolks and then blend into the hot mixture in the saucepan. Bring to the boiling point, remove from heat, cool. Add the vanilla flavoring. Fill cream puffs and sprinkle with powdered sugar. Variations: Add a little melted chocolate and 1 1/2 teaspoons instant coffee or 1 teaspoon K.K. burnt sugar flavor. Cherry: 1/2 cup chopped cherries with 1/4 teaspoon K.K. almond flavoring and 1/2 teaspoon K.K. cherry flavoring. Orange: Add a few slices of mandarin oranges to the filling with 1 teaspoon K.K. orange flavoring. Nice fillings for cream puffs can be made with vanilla pudding mixes varying fruits and flavorings to your own taste.
