APPLE-CRANBERRY PIE 1 1/2 recipes basic pastry dough for 8 to 9-inch pie shell 2 Tbsp. lemon juice 6 c. peeled, cored and sliced apples 1 1/4 c. plus 2 Tbsp. sugar 1/8 tsp. salt 1/4 tsp. nutmeg 2 tsp. cinnamon 3 Tbsp. flour 4 Tbsp. butter 1/2 to 3/4 c. whole cranberries Preheat the oven to 450 degrees. Prepare the pastry dough and set it aside. Sprinkle the lemon juice over the apples in a large bowl. Mix with 1 1/4 cups of the sugar with the salt, nutmeg, cinnamon and flour, then add to the apples and toss until they are evenly coated. Roll out 1/2 of pastry dough and place in pie pan. Fill pie pan with apple mixture. Sprinkle cranberries over all, then dot with butter. Roll out remaining dough and place on top. Crimp edges and cut steam vents. Sprinkle the top with the remaining 2 tablespoons of sugar. Bake for 10 minutes, then reduce heat to 350 degrees and continue to bake for 30 minutes more.
