TURKEY HASH 12 oz. turkey breast, diced, skinned and boned 1 Tbsp. plus 1 tsp. olive or vegetable oil 1/2 c. onion, diced 1/2 c. green pepper, diced 12 oz. parboiled all purpose potatoes, diced 1 c. sliced mushrooms salt and freshly ground pepper 2 Tbsp. snipped fresh chives 1/2 c. evaporated skim milk In large nonstick skillet, over medium heat, heat oil. Add onion; saute 10 minutes until soft. Add pepper and cook 10 minutes, stirring. Add potatoes; cook, turning occasionally, until lightly browned and crisp. Add turkey; reduce heat to low and cook until potatoes and turkey are browned and crusty. Add mushrooms and cook until wilted. Very slowly pour milk and cook, stirring, until incorporated. Season to taste with salt and pepper. Sprinkle with chives. Makes 4 servings; 295 calories per serving.
