LOW CALORIE CREAM OF BROCCOLI SOUP 1/2 c. onion, chopped 2 Tbsp. margarine 1 chicken bouillon cube 1 c. boiled water 1 1/2 tsp. salt 1/8 tsp. pepper 1 1/2 c. carrots, grated 1/2 c. celery, chopped 4 c. skim milk 4 Tbsp. flour 1 1/2 c. cooked broccoli, chopped 8 oz. Cheddar cheese, grated (optional) In a large saucepan, saute onion in margarine. In bowl, dissolve bouillon cube in boiling water. Add carrots, celery to onions. Cook over moderate heat about 10 minutes. In another bowl, gradually add a small amount of milk to flour; stir until smooth; add remaining milk. Pour milk mixture, salt and pepper to broccoli in saucepan. Cook over moderate heat until bubbles appears. Divide into 8 servings. May be served with grated cheese.
