BUTTERMILK YEAST ROLLS 1 pkg. dry yeast 1/4 c. warm water 1 1/2 c. warm buttermilk 3 Tbsp. sugar 1/2 c. melted shortening about 4 1/2 c. all-purpose flour 1/2 tsp. soda 1 tsp. salt Dissolve yeast in warm water in large mixing bowl. Add warm buttermilk, sugar and shortening, mixing well. Combine flour, soda and salt; add gradually to yeast mixture, beating hard with about 2 cups of flour, then add remaining flour mixture. Turn out on lightly floured board and knead about 7 minutes or until smooth and elastic. Then let rest 10 minutes. Shape into desired rolls or bread loaf. Let rise in warm place until doubled in bulk, about 1 hour. Bake at 350 degrees for 20 to 25 minutes. Yield: about 2 dozen.
