IRISH SODA BREAD EILEEN 4 c. flour 3 Tbsp. sugar 1 Tbsp. baking powder 3/4 tsp. baking soda 1 tsp. salt 6 Tbsp.butter 1/4 c. whiskey 1 1/2 c. raisins 2 eggs 1 1/2 c. buttermilk Preheat oven to 350 degrees. Put raisins in a small bowl and over them with whiskey. (Irish whiskey, if you have it.) Set aside. Grease a round 2 quart casserole. Mix dry ingredients. Cut in butter with a pastry blender or 2 knives. Add raisins. Beat eggs a little. Remove 1 tablespoon of egg and set aside. Stir buttermilk into eggs. Add buttermilk mixture to dry ingredients. Stir until just moistened. Batter will be very sticky. Flour hands and knead dough until manageable. Form into a ball. Place in bowl and rub top with reserved egg. Bake 1 hour and 20 minutes or until knife comes out clean. Cool. Remove from casserole and serve. Serves 10.
