PUMPKIN OAT MUFFINS 1 c. flour 1/2 c. brown sugar 2 tsp. baking powder 1 tsp. pumpkin pie spice 1/2 tsp. salt 1/4 tsp. baking soda 3/4 c. canned pumpkin 1 egg, slightly beaten 1/4 c. milk 1/4 c. oil 1 c. oatmeal 1/2 c. raisins Stir the flour, sugar, baking powder, spice, salt and baking soda. Add combined pumpkin, egg, milk and oil; stir just until dry ingredients are moistened. Stir in oats and raisins. Fill greased muffin cups 3/4 full. Bake at 425 degrees for 18 to 20 minutes.
