PUMPKIN ROLL 2/3 c. pumpkin 3 eggs 1 c. sugar 1 tsp. baking soda 1/2 tsp. cinnamon 3/4 c. flour Mix everything together. Press on cookie sheet that has been greased and lined with wax paper. Sprinkle with chopped nuts. Bake at 375 degrees for 15 minutes. Roll up in cotton dish towel that has been sprinkled with sugar. Leave cool for 2 hours. Unroll from towel and spread with filling. Reroll. Wrap in foil. Chill. Filling: 2 tsp. butter 1 (8 oz.) cream cheese 3/4 tsp. vanilla 1 c. powdered sugar Beat well and spread on pumpkin roll.
