RUM BREAD PUDDING DELIGHT 2 c. bread crumbs 2 c. milk 2 eggs, slightly beaten 1 c. sugar 1 tsp. vanilla 1 Tbsp. rum 1/2 c. margarine, melted 1/4 tsp. nutmeg 1/2 tsp. cinnamon 1 c. raisins Combine all ingredients in a large bowl; mix well. Pour into a greased 11 1/4 x 7 1/2 x 1 1/2-inch baking dish. Place in a pan of hot water. Bake at 350 degrees for 1 hour. Rum Sauce: 1/2 c. sugar 1/4 c. water 2 Tbsp. margarine 1 Tbsp. rum Combine sugar, water and margarine in a small saucepan; bring to a boil. Boil 1 minute. Remove from heat and stir in rum. Serve warm over bread pudding. Yield: 1/2 cup.
