APPLE CRANBERRY MUFFINS 1 1/4 c. cranberries 1 egg grated rind of 1 large orange 1/2 c. raisins 1/3 c. orange juice 1 tsp. vanilla extract 1 or 2 tart apples (to make 1 c.), diced 1/2 c. flour 1/2 c. whole wheat flour 1 tsp. baking powder 1/4 tsp. baking soda 3/4 tsp. cinnamon 3/4 tsp. nutmeg 1/4 tsp. ginger 1/4 tsp. allspice 1/2 c. sugar 1/2 stick (2 oz.) butter (cold and firm), cut into small pieces 1 c. walnuts, broken in medium pieces additional sugar Set oven to 350 degrees. Butter muffin pan or use cupcake liners. Wash and drain berries on paper towels. Dice apple to make 1 cup. In small bowl, beat egg. To mix, stir in grated rind, raisins, orange juice and vanilla and set aside. In large bowl, combine both flours, baking powder, baking soda, cinnamon, nutmeg, ginger, allspice, salt and sugar and mix well. Cut in butter (with a pastry blender or two knives) until mixture resembles coarse crumbs. Add orange juice mixture, mixing only until the mixture is barely moistened. Mix in cranberries, apples and nuts. Put mixture in muffin pans. Sprinkle with extra sugar. Bake for 25 to 28 minutes.
