ZUCCHINI BREAD

3 c. grated zucchini
3 c. sugar
1 1/2 c. vegetable oil
4 eggs
1 tsp. vanilla
3 tsp. cinnamon
1 c. raisins
3 c. flour (regular or whole
wheat)
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 c. walnuts, English
1 c. black walnuts

Combine zucchini, sugar, oil, eggs and vanilla and set
aside. Combine flour, baking powder, soda, salt and cinnamon.
Add this to the zucchini mixture, reserving about a cupful to
coat raisins and nuts. Mix the raisins and nuts with the
reserved flour mixture and add to zucchini mixture. Pour into
2 well greased and floured loaf pans. Bake at 325 degrees for about 1
hour and 15 minutes. Bread is done when tester comes out
clean.
Hint: Cover bottom of loaf pans with parchment paper
for easy removal.
