BUTTER MUFFINS Muffin Mix: 5 1/2 c. all purpose flour 4 Tbsp. baking powder 1/2 c. sugar 1 1/2 tsp. salt 1/2 c. butter or margarine, softened Butter Muffins: 2 c. muffin mix 1 tsp. sugar 1 egg, slightly beaten 3/4 c. milk For muffin mix combine flour, baking powder and salt. Cut in butter until mixture resembles cornmeal. Store tightly covered in refrigerator until ready to use. Yields about 6 cups. For butter muffins combine muffin mix, sugar, egg and milk. Stir just to moisten; fill well greased muffin pans 2/3 full. Bake at 425 degrees for 20 to 25 minutes or until lightly browned.
