BANANA BREAD 3/4 c. sugar 2 eggs 1 c. bananas, mashed 1 3/4 c. flour, unsifted 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. shortening Preheat oven to 350 degrees. Grease 9 x 5-inch loaf pan. Mix dry ingredients thoroughly. Mix sugar, fat and eggs until light. Blend in mashed bananas. Add dry ingredients and stir just until smooth. Pour into greased pan. Bake until firmly set, when lightly touched in center, 50 to 60 minutes. Cool on rack. Remove from pan in 10 minutes. One loaf, 5 x 9-inches. Makes 18 (1/2 inch) slices. Variations: Date nut banana bread: 1/2 cup chopped dates and 1/2 cup nuts.
