FAVORITE PANCAKES 1 1/4 c. sifted all-purpose flour 3 tsp. baking powder 1 Tbsp. sugar 1/2 tsp. soda 1 egg, beaten 1 c. milk 2 Tbsp. salad oil Sift together dry ingredients. Combine egg, milk and salad oil. Add to dry ingredients, stirring just until mois- tened. Bake on hot griddle. Variations: Feather Pancakes: Reduce flour to 1 cup. Increase baking powder and sugar to 2 tablespoons each. Add dry ingre- dients to liquid; beat until smooth. Bake on hot griddle. Blueberry Pancakes: When underside of pancakes are nicely browned, sprinkle about 2 tablespoons drained blue- berries over each cake. Turn, brown other side. Buttermilk Pancakes: Substitute buttermilk or sour milk for sweet milk. Add 1/2 teaspoon soda and reduce baking powder to 2 teaspoons. Bake on hot griddle. Yields 12 dollar size or 8 (4-inch) pancakes.
