ORANGE PANCAKES Pancakes: 2 eggs 1 1/2 c. milk 1/4 c. oil 2 tsp. grated orange peel 1/4 c. orange juice 2 c. pancake mix Orange Sauce: 2 Tbsp. sugar 1/3 c. orange juice 1/3 c. melted butter bit of grated orange rind In large bowl, mix eggs (slightly beaten), milk, oil, orange peel and orange juice. Add pancake mix and stir until smooth. Pour on skillet, preheated to 350 degrees. Bake until edges curl. Turn and bake. Orange Sauce: Blend sugar, orange juice and grated orange rind with melted butter. Heat until hot.
