SKYLINE APPLE MUFFINS 1 1/2 c. brown sugar 2/3 c. vegetable oil 1 egg 1 c. sour milk 1 tsp. soda 1 tsp. salt 1 tsp. vanilla 2 1/2 c. flour 1 1/2 c. apples, diced 1/2 c. pecans, chopped 1/3 c. sugar 1 tsp. butter, melted Combine brown sugar, vegetable oil and egg. Combine milk, soda, salt and vanilla; add milk mixture to sugar mix- ture, alternately with flour. Fold in diced apples and pecans. Fill greased muffin tins about 2/3 full. Use paper muffin cups, if desired. Mix sugar and butter; sprinkle on muffins. Makes 15 muffins. Bake at 325 degrees for 30 minutes.
